Easy vegetable Lo Mein


This is one of those recipes that is great for leftover pasta. It is also a quick way to get takeout without having to leave your house.

Ingredients

  • INGREDIENTS
  • 1 pound lo mein noodles or thin spaghetti, cooked to al dente and drained well
  • 1 tablespoon olive oil
  • 1-2 c. Frozen Stir-fry Vegetables
  • FOR THE SAUCE
  • 2 tablespoons reduced sodium soy sauce, or more, to taste
  • 2 teaspoons sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon Sriracha, or more, to taste(optional)

Instructions

  • In a small bowl, whisk together soy sauce, sugar, sesame oil, ginger and Sriracha; set aside.
  • Heat olive oil in a large skillet or wok over medium high heat. Add frozen vegetable and cook till hot.
  • Stir in noodles and soy sauce mixture, and gently toss to combine.
  • Serve immediately.
