This is one of those recipes that is great for leftover pasta. It is also a quick way to get takeout without having to leave your house.

- INGREDIENTS
- 1 pound lo mein noodles or thin spaghetti, cooked to al dente and drained well
- 1 tablespoon olive oil
- 1-2 c. Frozen Stir-fry Vegetables
- FOR THE SAUCE
- 2 tablespoons reduced sodium soy sauce, or more, to taste
- 2 teaspoons sugar
- 1 teaspoon sesame oil
- 1/2 teaspoon ground ginger
- 1/2 teaspoon Sriracha, or more, to taste(optional)
Instructions
- In a small bowl, whisk together soy sauce, sugar, sesame oil, ginger and Sriracha; set aside.
- Heat olive oil in a large skillet or wok over medium high heat. Add frozen vegetable and cook till hot.
- Stir in noodles and soy sauce mixture, and gently toss to combine.
- Serve immediately.

Lo mein is one of my daughter’s favorite foods. I haven’t made it in awhile though. This was a good reminder to add it to next week’s menu plan.
This is a perfect light meal especially since it is getting warmer. I also like that it is simple to make.
we have SO much leftover pasta in my house cause it’s something the kids eat basically every night. This would be a great meal for me to enjoy after, using their leftovers. Thanks!
