Corn Beef Casserole


This is one of those casseroles that can be made ahead time. That way when on nights you have soccer practice or dance class you can still feed your family a hot meal.

Corn Beef Casserole

Ingredients

  • 1 can condensed cream of chicken soup
  • 1 c. milk
  • 1 can (12 oz.) corned beef (about 1 1/2 c.)
  • 1 c. shredded Cheddar cheese (about 4 oz.)
  • 1 med. onion, finely chopped (about 1/2 c.)
  • 1/4 tsp. pepper
  • 4 c. uncooked egg noodles (about 8 oz.)
  • 1/2 c. dry bread crumbs
  • 1 tbsp. butter, melted

Instructions

  • Preheat oven to 375 degrees
  • Cook and drain noodles
  • Mix soup, milk, and pepper together
  • Crumble corn beef on bottom of casserole dish
  • sprinkle chopped onions
  • add noodles
  • sprinkle with cheese
  • add milk and soup mixture
  • stir together till mixed
  • sprinkle top of casserole with bread crumbs
  • Baked for 30 - 35 minutes till hot and bubbly
