is one of my family’s favorite places to go eat. It was a natural choice as one of my first reviews and giveaways. It would be an understatement to say that there are a lot of places to eat in Vegas and yet Cafe Rio is usually our “go to” spot. The food flavors are fresh and bright and so yummy. I love when I walk in the doors and the smell hits your nose–it is heaven.
There is really nothing typical Mexican about it to me. This is no taco bell for sure! You get your choice of meat, beans, and rice. (Depending on the entree). But don’t be fooled by the “typical” ingredients listed because the flavors they use to cook everything are unique. Pork Barbacoa is my all time favorite meat to add into whatever dish you go with. The portions are huge so plan on saving half of your meal for lunch tomorrow. Did I mention that the tortillas are made fresh right before your eyes? I always have my cute husband order me a few extra tortillas just to nibble on latter. I am addicted to them. And kids get a FREE cheese quesadilla
when you dine in. I love this place!

My favorite is a grilled steak taco salad with rice, pinto beans, grilled steak (extra meat!!!), mixed cheese (extra cheese!!!) with house dressing – mmmmmm, delicious 🙂 the to top it off “free meal!!!”

I would definitely order the pork salad with that delicious “ranch” dressing. I also love their cheese enchiladas with the hot sauce smothering them! We only have one in Denver, but would totally drive up there if I won or keep till I visit home in Utah!

I love Cafe Rio and usually get a chicken tostada. The salads are delicious, just too much for a lunch unless I have someone with me who wants to share. I also love their tortilla soup. It’s amazing!
