Old Fashioned Banana Cake

Yield: 1-2 pans/sheets of cake

Ingredients

  • 2 1/2 cups sugar
  • 2 cubes margarine, softened
  • 4 eggs
  • 1/2 cup sour cream
  • 2 tsp. baking soda
  • 2 cups mashed bananas
  • 3 cups flour
  • 2 tsp. vanilla
  • Frosting
  • 3/4 cup softened margarine
  • 3 cups powdered sugar
  • 3 tbsp. evaporated milk
  • 1 1/2 tsp. vanilla

Instructions

  • Banana Cake:
  • Cream together sugar and margarine. Add eggs, sour cream and baking soda (beat well). Finally add mashed bananas, flour and vanilla. Grease or flour a big cookie sheet. Bake at 350* for 20-25 minutes. Make sure toothpick inserted in center comes out clean.
  • Frosting:
  • Beat together frosting ingredients and frost once the cake is completely cooled.

Notes

This dessert can be made in a cookie sheet pan or a cake pan. The recipe yields more than a regular pan can hold, so two 9 x 13 cake pans or cookie sheets can be used depending on the desired thickness of the cake bars. This recipe is great for luncheons and parties and is sure to be a crowd-pleaser. (Not to mention that this cake is delicious.)
