S’more Bites


These scrumptious bite-sized treats are easy to whip up and will make you think of summertime. They are small enough to satisfy as a cheat treat but with big flavor that will curb your sweet-treat cravings. Make these easy sweets for parties, holiday get-togethers, or just because! This batch makes a ton of these bite-size little wonders, but the payoff will come when you discover how yummy these are. Don’t be afraid of experimenting and using different chocolate candies such as Reeses, 100 Grand bars, and York Peppermint Patties to name a few.

S’more Cookie Bites

These scrumptious bite-sized treats are easy to whip up and will make you think of summertime. They are small enough to satisfy as a cheat treat but with a big flavor. Make these easy sweets for parties, holiday get-togethers, or just because!

Ingredients

  • 24 Hershey's Chocolate Kisses/bar squares
  • 1 Pkg. regular-sized marshmallows
  • 1 Pkg. peanut butter cookie dough
  • OR
  • 3/4 cup peanut butter
  • 1/2 cup unsalted butter
  • 1 1/2 cups flour
  • 1/3 cup granulated sugar (plus more for rolling)
  • 1/3 cup brown sugar
  • 1/2 tsp salt
  • 1 tsp baking soda

Instructions

  • Preheat oven to 375F degrees and grease/spray a mini-cupcake pan.
  • Make dough into one-inch balls, and press each ball into each cup of mini cupcake pan. Make sure dough has a hole in the center and that the dough comes up the sides like a cup.
  • Bake 8–10 minutes or until golden brown.
  • Place a chocolate chip in each cup and top with one marshmallow.
  • Turn the oven to broil and broil cookies until marshmallows are slightly toasted. This should happen quickly, so watch the cookies.
  • Once broiled, take out of oven and place cookies on a cooling rack to cool or enjoy warm.

Notes

There are many alterations that can be made with this recipe. These cookies can be made without a mini-cupcake pan. Simply make or buy the dough, roll it into one-inch squares and cook the cookies. If made this way, make the cookies first by baking 8–10 minutes or until golden-brown. Place a marshmallow on top of each cookie and broil marshmallows in the oven. Once broiled, take out of the oven and place a chocolate kiss on top of each marshmallow while the marshmallows are still warm. Enjoy!
