Veggie Lover’s Awesome Cheese Dip

So you guys are going to love this simple recipe. I used to have a hard time eating vegetables. I know that I’m not the only person in the world that has had this problem. I seriously used to choke when my parents tried to get me to eat a simple salad. I just saw green and couldn’t put it in my mouth. I’ve gotten over my vegetable phobia over the years since deciding that they’re actually kind of delicious. I had a little help loving veggies because of cheese. I absolutely love food that is cheesy. Whether it’s sprinkled on top, smothered in it, or just giant blocks of cheese, I love it! So broccoli—one of the vegetables I grew up thinking was “ick,” is actually really tasty when paired with a yummy cheese dip. Cauliflower, carrots, and other veggies go so well with this dip too, and the best part: it’s incredibly easy to make. And your kids (or significant other) might just want to eat their veggies more with this cheesy dip. Got a few minutes? Whip this up!

To keep it simple, I just bought some broccoli for this dish. You’ll want to steam your broccoli in the microwave. I always get a microwave-safe bowl, fill it with broccoli, and then cover about 2/3rds of the broccoli with water. When that’s done, strain the rest of the water and set your broccoli (or other vegetables aside). You can always cook your vegetables on the stovetop, but steaming them is just so much easier for me!

 

For the dipping sauce you will need 3 simple ingredients:

  1. 1 block cream cheese (I use fat-free but you can go all out with the normal kind)
  2. 1/2 cup cheese dip (Cheez Whiz is my go-to, but an off-brand will do as well)
  3. 1/4 – 1/2 cup milk (any kind)

Easy, right? I always put the cream cheese in the pot and mash it until smooth, then I turn the stovetop on. Once that’s done, add the milk and the cheese dip into your pot and set the heat to medium. If everything is mixed together pretty well before the mixture gets hot, then the milk shouldn’t burn. This is why you mix everything before the heat. Let cook for just a few minutes until hot, stirring often. Once the mixture is well combined and hot, then viola! You’re done. This cheese dip cooks really fast too, so plan on just a few minutes for it to be completely done. Add it on the side to compliment your veggies or on top of them. Because of the cream cheese (and the nature of this being a cheese dip as well) it’s not as healthy as say, just the head of broccoli, but it sure makes eating broccoli so much better! You can also use this cheese dip for whatever you want, not just veggies. Try it for something new and see if you like it!
