Healthier Rice Pudding

Ingredients

  • 2 -3 cups soymilk (or almond milk)
  • 2 cups cooked rice (I use short grain brown rice)
  • 1 1⁄2 teaspoons cinnamon
  • 1 tablespoon pure vanilla extract
  • 1 cup raisins
  • 1⁄2 cup slivered almonds
  • 1⁄4 cup agave syrup (or honey, or maple syrup)

Instructions

  • In a medium saucepan, add the milk of choice, cooked rice, cinnamon, vanilla, raisins, almonds, and sweetener and bring to a boil.
  • Reduce heat and simmer on low heat about 15-20 minutes or until pudding thickens to desired consistency, stirring occasionally.
